CLASS 1: INTRODUCTION TO HOW FOODS FIGHT CANCER
Certain diet patterns seem to have a major effect on helping people diagnosed with cancer live longer, healthier lives. The National Cancer Institute research shows that as much as 40% of cancer risk may be related to diet. In this class, you will learn about the right food choices that can help reduce the risk of developing cancer as well as prevent a recurrence.
Recipes include Easy Bean Salad, Black Bean Dip with Baked Tortilla Chips, Veggies in a Blanket, sampling of non-dairy milks
CLASS 2: FUELING UP ON LOW-FAT, HIGH-FIBER FOODS
Dietary fat not only hinders the immune system, it also drives hormone production, which can mean higher rates of hormone-related cancers such as breast & prostate cancer. Fiber helps your body rid itself of toxins, waste hormones, excess cholesterol, chemicals, & other undesirables. It is especially important in helping the immune system function properly, as well as facilitating the removal of waste from the body. Without fiber in the diet, these excess compounds are often reabsorbed into the bloodstream, leading to a possible increased risk of cancer. Steering clear of meat, dairy products, fried foods, & other fatty fare is an important first step in preventing & surviving cancer. The easiest way to be healthy is to build your meals from foods that are naturally low in fat & to use cooking methods that do not require added fats or oils. In this class you will learn how to prepare delicious, low-fat dishes made from whole grains, legumes, vegetables, & fruits.
Recipes include Roasted Red Pepper Hummus with whole wheat pita bread & raw vegetables, Sweet-&-Sour Stir-Fry, Brown Rice, Gingered Melon
CLASS 3: DISCOVERING DAIRY & MEAT ALTERNATIVES
When cancer researchers started to look for links between diet & cancer, one of the most noticeable findings was that people who avoided meat & dairy products were much less likely to develop the disease. Consuming dairy products causes worrisome biological changes in the body, including an increase in the amount of insulin-like growth factor 1 (IGF-1) in the bloodstream. Scientific studies have shown elevated IGF-1 levels to be a catalyst for the growth of breast &prostate cancer cells. Meat is another food that may be linked to cancer & other illnesses. This link is in part due to the high-fat, high-iron & fiber-free characteristics of meat compared to plant foods, as well as the formation of carcinogens when meats are cooked. These cancer-causing chemicals, called heterocyclic amines, tend to form within the meat tissue when exposed to high temperatures. In this class, you will explore a variety of vegetarian sources of protein, all of which are low in fat, high in fiber, & loaded with cancerfighting nutrients.
Recipes include Chickpea Burgers, Tempeh Broccoli Sauté over couscous, Chocolate Mousse with fresh fruit
CLASS 4: CANCER-FIGHTING COMPOUNDS & HEALTHY WEIGHT CONTROL
Both antioxidants & the body’s immune system are critically important in fighting cancer. Cancer-fighting compounds such as antioxidants, mainly found in fruits & vegetables, assist in halting free-radical damage which can otherwise lead to cancer development. Healthy weight control is also essential for warding off a variety of chronic diseases. Studies have shown that slimmer people are less likely to develop cancer compared to their heavier counterparts. Trimming excess weight may also improve survival after cancer has been diagnosed. In this class, the instructor will discuss & demonstrate healthful dishes loaded with immune-boosting nutrients such as beta-carotene, lycopene, vitamin C, & zinc to help you learn how to easily & naturally maintain a healthy weight & a cancer-fighting nutritional regime.
Recipes include Spinach Salad with Citrus Fruit, Zippy Yams & Collards, Buckwheat Pasta with Seitan
NOTE: All foods prepared in these classes are vegan & completely free of dairy, egg, gluten & peanuts. Some dishes may contain wheat, corn or soy (in which case, certified organic ingredients will be used). Gluten-free ingredients will be used whenever possible.

OUR PHILOSOPHY:
SIMPLE, NUTRITIOUS, DELICIOUS
Our classes teach you how to prepare plant-based dishes, both raw & cooked, that are quick & easy so even busy people with no kitchen experience can make every day. Our recipes also call for ingredients that can be found in any local health food store & most grocery stores. No special ordering of expensive exotic foods required.
We focus on nutrient-dense whole foods that will nourish your body to keep you healthy & give you the energy to get through the day. And we want you to put the best foods available in your body so only organic ingredients are used whenever possible.
But really, it's all about the taste! Eating is an experience that should be enjoyed! We know you won't eat something if you don't like it, no matter how good it is for you. So we make sure our recipes are not just healthy, but satisfying & full of flavor, too.
THERE ARE SO MANY FREE RECIPES ONLINE. WHY TAKE A CLASS?
Yes, you can find plenty of recipes online & videos on YouTube - all for free. But Nourished Body classes are not just about the food; they are about the education. We can teach you more in 1-2 hours than what you might find surfing the internet for an entire day because we have already done the reading & have the experience. A live class provides an opportunity for you to interact with a real person, & ask questions & get practical answers that help you follow a healthy lifestyle every day. We also explain why some things are healthy & others are not. And of course, you also get to try the food to see if you like it before you spend a lot of money on a complicated recipe that calls for ingredients you've never even heard of.
Nourished Body classes are also about community. Attending a class makes you part of a group of like-minded people who are there to support you & your healthy lifestyle. We always have lively discussions about various topics (not always food-related), & many participants share their knowledge & experience so you get to learn from them as well.
