“Food for Life is the ONLY dietary program I recommend. CLASS 1: INTRODUCTION TO HOW FOODS FIGHT DIABETES
The road to diabetes does not have to be a one-way street. There is reason for hope! People who eat plant-based meals are less likely to ever develop diabetes, & for those who have diabetes, plant-based meals can help improve blood sugar levels & prevent complications. These meals are affordable & can be quite delicious & satisfying. A low-fat, plant-based approach offers a new tool that many have found to be very useful. In this class, we will review the latest science behind this approach, consider some simple ideas for getting started, sample four dishes & explore helpful resources!
Recipes include Good-Enough-for-Guests Green Salad, Yes-You-Can Black Bean Chili, Sweet Potatoes or Toasted Brown Rice, Chocolate Cherry Nirvana Smoothie.
CLASS 2: THE POWER OF YOUR PLATE & GROCERY CART
Let’s get practical! This class provides the knowledge & resources for trying out a new way of eating. By using the tools provided, participants often experience better blood sugar levels, weight loss if needed, & other health benefits within a surprisingly short time. The Power Plate is a diagram that illustrates the essential food groups: vegetables, whole grains, legumes, & fruits. This class will assist you with creating your own weekly meal plan based on the Power Plate, & you'll learn how to navigate the grocery store to find the treasures (& avoid the troublemakers!). We’ll discuss common concerns, including how to prevent & treat low blood sugar for those taking certain medications, & how to ease your transition into a filling, high-fiber way of eating. Taste some of the staples that you’ll want to bring home from your grocery store.
CLASS 3: UNDERSTANDING TYPE 2 DIABETES
New research shows that reducing the fat we eat helps to reduce the fat that can build up in muscle cells, which can improve the body’s ability to use insulin. Common dietary fat-lowering techniques, such as taking the skin off the chicken or switching to low-fat milk, do not go far enough in reducing the total amount of fat for many people to really repair this underlying problem in type 2 diabetes. Fortunately, the Power Plate foods are all naturally low in fat. Sample several flavorful dishes that are sure to become favorites. Chances are you won’t even miss the fat!
Recipes include Very Primo Pasta, Broccoli Salad, Steamed Kale with “Parmesan Cheese”, Gingered Melon.
CLASS 4: DESIGNING A DIET FOR MAXIMUM WEIGHT CONTROL
This is not a “diet” that asks you to walk around hungry or feel deprived. How can you lose weight, if needed, without skipping meals or limiting your portions? It’s all about fiber. Plant-foods have it & animal foods don't. Fiber is what makes us feel full. As a bonus, it also helps to control blood sugar levels, protects against certain cancers, & (of no small importance) keeps us “regular”. Learn to comfortably fill up on low-fat plant-based whole foods & watch the pounds melt away. Enjoy some delicious high-fiber dishes (without any cardboard taste!).
Recipes include Asian Persuasion Coleslaw, Sweet-&-Sour Vegetable Stew, Quinoa.
NOTE: All foods prepared in this class are 100% plant-based & completely free of dairy, egg, & peanuts. Gluten-free ingredients will be used whenever possible. Some dishes may contain gluten, but gluten-free alternatives will always be provided. Some recipes may include corn or soy, in which case, certified organic ingredients will be used. A soy-free option will be available as well. If you are sensitive to tree nuts or any other foods, please let Deb know at the beginning of class.

About the PCRM Food for Life Diabetes Initiative
Diabetes is a major public health problem of epidemic proportions. Nearly 10% of the U.S. adult population (29 million) has diabetes (up from 8% in 2007), & nearly 1/3 of those 65 & older have the disease. Uncontrolled, diabetes can lead to complications from head to toe, including stroke, loss of vision, heart disease, kidney failure & various problems due to nerve damage & circulatory problems, such as erectile dysfunction or lower-extremity amputation. Research studies have demonstrated that a plant-based nutrition approach reduces the risk of diabetes & can greatly benefit those who have been diagnosed with the disease.
The goal of the Food for Life: Diabetes Initiative program is to empower people who have diabetes & those concerned about developing diabetes, along with their friends & family members with new information & skills. Each class offers a cooking demonstration & provides samples of delicious, health-promoting dishes, along with a take-home packet of easy & affordable recipes.
A well-planned plant-based diet has many nutritional benefits & has been demonstrated to be as acceptable as the portion-controlled diet for diabetes management. A plant-based diet has also been endorsed by the American Dietetic Association & described as a safe choice in the 2009 American Diabetes Association's Standards of Care for Diabetes.
Dr. Neal Barnard’s Program for Reversing Diabetes is the text used in the diabetes classes. The book includes a wealth of nutrition information & recipes. You may purchase a copy from your favorite retailer or directly from Physicians Committee for Responsible Medicine (PCRM).

OUR PHILOSOPHY:
SIMPLE, NUTRITIOUS, DELICIOUS
Our classes teach you how to prepare plant-based dishes, both raw & cooked, that are quick & easy so even busy people with no kitchen experience can make every day. Our recipes also call for ingredients that can be found in any local health food store & most grocery stores. No special ordering of expensive exotic foods required.
We focus on nutrient-dense whole foods that will nourish your body to keep you healthy & give you the energy to get through the day. And we want you to put the best foods available in your body so only organic ingredients are used whenever possible.
But really, it's all about the taste! Eating is an experience that should be enjoyed! We know you won't eat something if you don't like it, no matter how good it is for you. So we make sure our recipes are not just healthy, but satisfying & full of flavor, too.
THERE ARE SO MANY FREE RECIPES ONLINE. WHY TAKE A CLASS?
Yes, you can find plenty of recipes online & videos on YouTube - all for free. But Nourished Body classes are not just about the food; they are about the education. We can teach you more in 1-2 hours than what you might find surfing the internet for an entire day because we have already done the reading & have the experience. A live class provides an opportunity for you to interact with a real person, & ask questions & get practical answers that help you follow a healthy lifestyle every day. We also explain why some things are healthy & others are not. And of course, you also get to try the food to see if you like it before you spend a lot of money on a complicated recipe that calls for ingredients you've never even heard of.
Nourished Body classes are also about community. Attending a class makes you part of a group of like-minded people who are there to support you & your healthy lifestyle. We always have lively discussions about various topics (not always food-related), & many participants share their knowledge & experience so you get to learn from them as well.
